I just wanted to share my exciting news with everyone:

I was recently cast in my first commercial!

It is for a local home health care company here in Michigan called The Medical Team.

Multiple Sclerosis is an “autoimmune disease”. Instead of the immune system protecting the body, it attacks itself. OK, so I am SO sick of eating soup for lunch. I pack my lunch EVERYDAY for school so that I am not tempted to go out and eat at a restaurant: “IF YOU FAIL TO PLAN, YOU PLAN TO FAIL” - JILLIAN MICHAELS

So, I was in my kitchen tonight thinking, “I REALLY do NOT want soup AGAIN tomorrow…I need something NEW!” So, I forgot I had a few packages of the Tofu Shirataki Noodles (I learned about them from The Hungry Girl Cookbook!). Frankly, I forgot about them because I made a dish a while back with them and it was NOT good.  So, I was a little scared to use them again.  But, I didn’t want them to go to waste so I took them out of the fridge.  I looked on the back and there was a recipe for Fettuccine Alfredo…ok, my Mom always said it was “A heart attack on a plate”, so WHY would it be on the back of something healthy?!  But, as I read on, it said the WHOLE ENTIRE recipe was 95 calories!!!!!!!! I was so excited, I had to try it… and it is AMAZING! It tastes just like the real thing!!!

Here’s the recipe:

1 package of Tofu Shirataki Fettuccine Shaped Noodle Substitute

2 tbsp fat free cream cheese

2 tbsp reduced fat Parmesan cheese

1 fat free sour cream

Directions:

Drain and rinse noodles thoroughly.  Microwave them for 2 minutes to reduce the authentic aroma, then dry very well.  Add cream cheese, Parmesan and sour cream, mix well, microwave for an additional 1 minute, then mix again.  ENJOY!!!!

It is seriously so good.  You could even add a couple pieces of 35 calorie bread and some veggies to make it a full meal….all under 200 calories!!!!!
